Soil: Kimmeridgian marl, flint and clay-limestone.
Blend: 100% Sauvignon Blanc.
Ageing: 4 to 5 months on fine lees in stainless steel tanks.
Tasting: This wine has a brilliant pale yellow color and is very mineral with a characteristic touch of gunflint. It is very well balanced with a nose of great intensity and a full, fresh and frank mouth.
Pairings: Shellfish and shrimp, shellfish (lobster, lobster), cold fish, fish soup, bouillabaisse, smoked fish, fried or grilled fish, fish in sauce, soft cheeses, goat cheese, asparagus.
