AOC : Sancerre.
Soil : Clay-limestone (65% "terres blanches") and limestone (35% "caillottes").
Maturing : In stainless steel tanks, on fine lees.
Blend : 100% Sauvignon Blanc.
Tasting : Fresh and lively wine with citrus fruit aromas; the white earth brings power and roundness to the wine, fruit and finesse.
Ideal with shellfish and shrimp, shellfish (lobster, lobster), cold fish, fish soups, bouillabaisses, smoked fish, fried or grilled fish, fish in sauce, soft cheeses, goat cheese, asparagus.
